This is the recipe from my dear friend on Kauai island, Hawaii.
1/4 cup butter, melted
1/2 cup raisins
1/2 cup non-dairy milk like hemp, almond, coconuts milk
1 egg
1/2 cup canned or mashed pumpkin
1 1/2 cup gluten free flour
1/2 cup coconuts sugar
2 tsp baking powder
1/2 tsp sea salt
1 tsp Ceylon cinnamon (this type of cinnamon will not raise blood sugar)
1 tsp nutmeg powder
10 large walnuts
Heat oven to 400F. Grease bottoms only of 12 medium or 6 large muffin cups. Melt butter, add raisins. Stir in milk, pumpkin, and beaten egg. Sift dry ingredients. Stir dry ingredients into wet just until moistened (batter will be lumpy). Fill muffins cups 2/3 full. Bake until golden brown, about 20 min. If you would like to unsweetened muffins, you may cut down raisin to 1/4 cup.
