Flour used in Italy seems co​ntain much less gluten

You can use Gluten-Free Flour for baking but you may try Antimo Caputo Chef’s “00” Flour for baking. My gut does not accept flour in the U.S. (I assume I am very sensitive to the pesticides sprayed in the wheat) but no problem with this one as many of Amazon reviewer wrote. It is very true. I thought you might give a try!
