Type 1 Diabetes Trigger for Children

This article shows if “Nitrates -> Nitrites (with two ii)” conversion is not properly occurred due to an environmental trigger, it might cause Type 1 Diabetes in children.  In this study found the culprit is nitrates rich foods like salami and ham. Nitrites are able to destroy insulin-producing cells. I have one child in relatives in insulin every day. He was a very fussy eater and preferred to eat cold cuts but no vegetables. I wonder it was the trigger. My gut is very sensitive to Nitrates contained food like ham cooked in the holiday season. I get a migraine headache from it.
